Pre-heat oven to 350°.
Cream together the coconut oil and sugar until it resembles caramel, approx. 2 minutes.
Add the non-dairy milk and vanilla extract and mix together for 2 minutes.
Add the all-purpose flour, baking soda, baking powder and salt. Mix together (either by hand or using stand mixer).
Once it resembles cookie dough (approx 1-2 minutes), add the chocolate chips.
Form golf ball sized balls and place on silicone mats/parchment paper on non-stick baking sheet. Use your palm to slightly flatten the balls of dough.
Bake in 350° oven for 8-10 minutes. They may look a little undone, but they will continue cooking and firm up once they cool on the baking sheets.
After cooling down for 5 minutes, use a spatula to remove the cookies from the baking sheets and place on wire rack.
