- Pre-heat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper or use a silicone mat.
- In a large mixing bowl, add the oats, nuts, salt and cinnamon. Stir to blend.
- Mix the wet ingredients in a measuring cup and pour into the mixing bowl. Mix well so everything is well-coated.
- Pour the granola onto the baking sheet and use a spatula or large spoon to spread it in an even layer.
- Bake until lightly toasted, approximately 15-20 minutes. Stif granola halfway through to ensure an even toast.
- Take the granola out of the oven after 15-20 minutes and allow to cool for at least 20 minutes.
- Remove granola from baking sheet and add any dried fruit that you would like. Some good options are dried cranberries, dried blueberries, raisins, vegan chocolate chips, shredded coconut, etc.
- Store the granola in an airtight container at room temperature for 1 week on in a sealed freezer bag in the freezer for up to 3 months.
