The best vegan granola

This vegan granola recipe is amazing - it's a little sweet, a little salty, crunchy and provides an amazing mouth-feel. It also makes awesome gifts for your loved ones!

Ingredients
  

  • 4 cups Rolled oats or GF rolled oats
  • 1 1/2 cup chopped raw nuts or seeds (I used walnuts, sliced almonds and pecans)
  • 3/4 teaspoon Himalayan pink salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup melted coconut oil or sunflower oil
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla or almond extract

  • Spoon
  • Baking sheet
  • Measuring cups and spoons

Method
 

  1. Pre-heat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper or use a silicone mat.
  2. In a large mixing bowl, add the oats, nuts, salt and cinnamon. Stir to blend.
  3. Mix the wet ingredients in a measuring cup and pour into the mixing bowl. Mix well so everything is well-coated.
  4. Pour the granola onto the baking sheet and use a spatula or large spoon to spread it in an even layer.
  5. Bake until lightly toasted, approximately 15-20 minutes. Stif granola halfway through to ensure an even toast.
  6. Take the granola out of the oven after 15-20 minutes and allow to cool for at least 20 minutes.
  7. Remove granola from baking sheet and add any dried fruit that you would like. Some good options are dried cranberries, dried blueberries, raisins, vegan chocolate chips, shredded coconut, etc.
  8. Store the granola in an airtight container at room temperature for 1 week on in a sealed freezer bag in the freezer for up to 3 months.

This vegan granola recipe is amazing on its own as a snack. We also like to include it in vegan yogurt, smoothie bowls and mixed with fresh fruit. Your family and friends will be amazed by this delicious vegan granola!
